How To Make Beer Battered Fish

It was Friday, I kissed my girls on the cheeks and gave them their packed lunch (prep by their papa) and sent them away to school then I took my dog for a walk in the Park. When I’m not chasing the dog around the park I sit there staring away day dreaming what I want to cook for dinner (more like what I want to eat or crave). I decided to make some fish and chips for dinner. I went ahead and did what I planned for the day. After my errands I went to the grocery to buy the remaining ingredients I need for dinner. I picked up the fish, frozen chips, some vegetables and lastly I needed some corn flour. I stood in front of the baking section carefully checking every single product on shelves and to my disappointment they didn’t have any corn flour. I went ahead and queued up to pay for what I have in the basket. I asked one of the staff and they told me they do sell corn flour, I checked again and nothing. The grocery staff was determined they do have it, she went and checked the shelves herself and nothing, she didn’t find any either. She ask how I’m going to make the batter fort he fish? I said I don’t know but I will figure it out.

I went home, drop the grocery bags and took my phone out to check google for recipes and inspirations. After looking at different recipes online I realized I don’t need cornflour to make the batter for the fish. As long as I have baking powder and a very cold beer it should work.

I put all the ingredients as I would with corn flour and added baking powder. I mixed it all up and heated the oil to fry the fish. When it was ready, I dipped the fish into the batter making sure each side is covered, pop the fish into the hot oil and waited for the each side to go golden brown. I took the cooked fish out and I was very happy it turned out very well! I continued cooking the rest of the fillets, chips in the oven and vegetables in the steamer. It all went well in the end.

Now it’s time to taste the food (crunch time..haha! literally). My family tucked into their fish and chips, they dug their knives & fork into the battered fish.  I heard the crunch and the..hmmm afterwards, they didn’t have to say anything I knew it was good because I did the same exact reaction when I tucked into my dinner. The family was happy with full belly and so was I, it was a success!

I hope you enjoy this recipe too. It’s simple and so tasty!
