Probably the most popular Filipino dish! It’s so easy to make and very tasty. Many of you know that Adobo has many variations, we have regional versions and every household have their own take to the dish too.
Northern part of Philippines like Pangasinan like their Adobo more on the sour side, some parts of Philippines love their adobo a little dry and in Zamboanga they like their Adobo with coconut milk. Some with boiled eggs! Pepe’s also have our canapé version “Adobo Paté on Blinis” this was a hit to both British and Filipino palate.
This recipe is a simple way of cooking Adobo, it has all the basic ingredients and techniques for you to start with. You can use chicken or pork or both. Maybe you can create your own version too! How To Make Chicken AdoboPrint Recipe
- 800g-1kg Chicken drumstick (you can also use thighs or breast)
- 1/2 cup soy sauce
- ¼ cup vinegar
- 1/2 cup water
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3-5 bay leaves
- black pepper
In a large bowl mix soy sauce, vinegar, pepper, chicken and (ideally) marinate for 1 hour or overnight
Heat some oil in a pot on medium heat, sautéed the onions until translucent
Add garlic cook for 1 minute then add chicken leaving the marinade sauce for later, cook the chicken until it’s a little brown
Pour marinade, water and add bay leaves in the pot, put the lid on and leave it to boil
Once boiled turn the heat down and simmer for 30-40 minutes
Turn the heat off and it’s ready to serve
Best served with fragrant jasmine rice, Enjoy!
