Admittedly I am not a baker BUT after many many years I have perfected this recipe because it is the only cake I know I can make and rely on; with little skills I have in baking. I know it will turn out right! I have hosted Suppers before and sometimes one of my dessert is something baked. While it’s in the oven I hope and pray that it will turn out fine, Luckily for me it turned out edible, haha!
I always buy bananas for the family, it’s a great snack and its tasty. Sometime we have too many over-ripe bananas and because I hate wasting food I make it into a banana cake. FYI when I say over-ripe, its when the skin starts to form black dots. For some reason my kiddos don’t want to eat them anymore..kids ey!

- *For the cake*
- 300g plain flour
- 1tsp baking powder
- 1/2tsp bicarbonate of soda
- 200g caster sugar or brown sugar
- 4 eggs
- 250ml butter, melted and cooled
- 4 banana, mashed
- *For the frosting*
- 125g unsalted butter at room temperature
- 50g icing sugar
- 250g mascarpone
*For the cake*
Heat the oven to 150c fan / 130c gas mark 2.
Line a 9 inch cake tin and put aside for later.
In a large bowl sift flour, baking powder and bicarbonate of soda and stir in the sugar.
In another large bowl, beat the eggs and butter.
Add mashed banana and stir banana mixture into the flour mixture.
Pour the cake mixture into the cake tin and put it inside the oven and bake for 1 hour or until the skewer comes out clean.
*For the frosting*
Beat the butter and icing sugar together until soft and then beat the mascarpone. Spread the cheese frosting after the cake has cooled down.
I sprinkled some edible gold dust on top of the frosting and some white candy toppings.
