Beef Short Ribs Nilaga

A perfect winter warmer or during rainy days for us here in UK. Filipinos love this dish even on a hot day! My father ‘Pepe’ would make this for us and I remember eating it and sweating. My rice would be swimming in broth just how I like it.

Ingredients

  • 1kg beef short ribs
  • 1tsp black peppercorn
  • 2 large potatoes (peeled & quartered)
  • 1 medium onion (roughly chopped)
  • Salt
  • Kale or park choi or cabbage (optional)
  • Corn (optional)
  • Fish sauce (optional)
  • 6 Pints water

Instructions

Put onions and black peppercorn to a pot with 4 pints of water on high heat until it boils

Add beef short ribs and bring to boil again

Once boiled turn the heat down to low, put the lid and simmer for 1 hour or until the beef is soft

Add 2 pints of water, potatoes and salt, boil for 20 mins with the lid on

Taste the soup and add some fish sauce or salt if needed

Add corn and kale then simmer for another 15 mins

Ready to serve with some spring onions to garnish and some rice !
