CREAMY CHICKEN SOUP AND GIGLI PASTA
Ohh so delicious and so comforting you can almost feel it hugging you! This is great dish to have during winter and maybe when you are feeling a little under the weather. It’s one of many modern Filipino dishes that became popular but I don’t know the origin of this dish or who invented this but who ever that might be, he/she is a genius.
Usually Sopas is made with macaroni pasta but I’m a bit of a rebel and wanted to try another type of pasta. I know I can get macaroni at any grocery here in the UK but I thought why can’t we use other pasta? I don’t wanna discriminate on other pastas. Haha!! If you’re like me who tries to use what you have in your cupboard this might give you an idea on what to make for your next meal for the family. Many of you know I’m a working mum and have my hands on any business opportunities I can get my hands on so time is so precious. Sometimes our meal consists of ‘What is in my cupboard or fridge?’ then I make an executive decision on what recipe I can make on little time I have before leaving for the next schedule.

- 250g gigli pasta
- 800g - 1kg chicken wings
- 1 can spam, cubed
- 1medium onion, sliced
- 4 cloves garlic, minced
- 2 carrots, small cubes
- 2 celery sticks, sliced
- 2ltr water
- 200ml evaporated milk
- 1tbsp salt
- Pinch of ground black pepper
First let’s make the chicken stock. In a deep pot add water, onions, garlic, carrots and celery. Bring it to boil.
Add chicken wings, bring it to boil and simmer on medium heat for 30 minutes.
Scoop the chicken out of the stock into a plate, leave it to cool on the side. Once cooled, debone the chicken and put it aside for later. Keeping the stock in the pot on low heat.
Add pasta, salt and pepper into the chicken stock. Cook the pasta until al dente not soft.
Add evaporated milk and deboned chicken meat inside the pot and simmer for another 10 minutes.
Taste your sopas, add more seasoning to your taste and let it simmer.
It’s ready to serve! Enjoy!
