Kaldereta A Heart Warming Beef Stew

Kaldereta or Caldereta is a heart warming dish, popular at many Filipino occasions and fiestas! Traditionaly cooked with goat and with liver until tender. Some people leave the liver out but I love it with it, it gives the dish a depth in flavours. This particular dish is very dear to me, I was taught by my late father ‘Pepe’ how to make this dish and gave me tips and a secret recipe (sorry not included here). The most fondest memory I have of him and our time together. 

Kaldereta A Heart Warming Beef Stew

Ingredients

  • 900g stewing beef (you can add some ribs too)
  • 1 large onion, chopped
  • 1tsp minced garlic
  • 500ml passata
  • 1/4 cup tomato paste
  • 1/2 cup liver paste
  • 1 red bell peppers, sliced into squares
  • 1 green bell peppers, sliced into squares
  • 200g frozen peas
  • 150g green olives
  • 300g potatoes, chopped in cubes
  • 2 large carrots, peeled and sliced
  • 3 bay leaves
  • 1 chilli, minced (optional)
  • 1/4 cup cooking oil
  • Salt and ground black pepper to taste

Instructions

Heat the cooking oil in a deep pan, sauté onion and garlic until translucent

Turn the heat to medium, add beef and cook until it turns light brown in colour

Add tomato paste, ground pepper and liver, mix well and simmer for 15 minutes

Pour the passata, stir well, cover and simmer for 1 hour or until the meat is tender (30 mins if using a pressure cooker)

Add potato, carrots and chilli cook for 10-15 minutes

Add olives, bell peppers, peas and cook for another 5 minutes

Add salt and pepper to taste

Best serve with white rice, enjoy!
