Tortang Talong (Aubergine Omelette)

Here’s a quick recipe you can make any time of the day. I’m a very busy Mama of 2 little girls and sometimes I don’t have much time to cook in the morning but I need something delicious to start my day.

It took me 15 minutes to make this and I scoffed it in 5 minutes then I’m off to do some work. 

Tortang Talong (Aubergine Omelette)

Serves: 1-2 Cooking Time: 15mins

Ingredients

  • 1 Medium aubergine
  • 2 medium eggs
  • 2 salad tomatoes
  • small bunch of coriander
  • 2 tbsp cooking oil
  • 3 tbsp soy sauce
  • 3 tbsp vinegar
  • salt
  • pepper
  • Cooked jasmine rice (optional)

Instructions

Wash aubergine under the tap and poke some holes using a fork

Place the aubergine in a plate and put it in the microwave for 9.30 - 10 minutes or until it's soft

While waiting for the aubergine to cook, prepare your eggs

Break 2 eggs into a bowl, add salt & pepper and mix well, put it aside for later

When the aubergine is soft to touch leave it to cool down

Once cooled peel the skin off, mash the aubergine, add your egg mixture and mix them together

On medium heat, heat some oil into a pan

Add your aubergine mixture and fry both sides until golden brown

Take it out of the pan on a clean plate

Chop your tomatoes, put your sauces into a small bowl and keep it on the side

Add the tomatoes and coriander to your aubergine omelette either on top or on the side which ever you prefer. Pour some sauce to your omelette or keep it on the side to dip your omelette

Serve with rice if you want or as it is
